pea and basil soup

ingredients

  • 2 tbsp olive oil
  • 2 large leeks (about 400g), trimmed and sliced
  • 1 clove garlic, sliced
  • 400g peas
  • 750ml low-salt veg stock
  • 12g (30 leaves) basil
  • 3 tbsp crème fraîche
  • lemon juice

toppings

  • black pepper
  • olive oil
  • parsley
  • chilli flakes
  • pancetta
  • lime juice
  • crème fraîche
  • basil

instructions

  1. heat oil
  2. add leek, add salt, cook until soft
  3. add garlic and cook
  4. add peas and stock
  5. bring to boil and cook for 5 min
  6. take off heat and cool for 5
  7. add basil, crème fraîche, lemon juice
  8. add salt/pepper to taste
  9. blend
  10. serve in bowls
  11. add toppings
