pea and basil soup

ingredients
- 2 tbsp olive oil
- 2 large leeks (about 400g), trimmed and sliced
- 1 clove garlic, sliced
- 400g peas
- 750ml low-salt veg stock
- 12g (30 leaves) basil
- 3 tbsp crème fraîche
- lemon juice
toppings
- black pepper
- olive oil
- parsley
- chilli flakes
- pancetta
- lime juice
- crème fraîche
- basil
instructions
- heat oil
- add leek, add salt, cook until soft
- add garlic and cook
- add peas and stock
- bring to boil and cook for 5 min
- take off heat and cool for 5
- add basil, crème fraîche, lemon juice
- add salt/pepper to taste
- blend
- serve in bowls
- add toppings
